Chicken Pot Pie Recipe


Who doesn't like a homemade chicken pot pie?
This is a recipe I came up with and have been using it for years, it's super easy to make, and it will make 3 pies, make all 3 or make 1 and freeze the rest for later


this pie never lasts long in this house

Chicken Pot Pie

ingredients: 
Pie Crusts
 1.5 cups butter or margarine
1 large onion, chopped
3-4 stalks celery, chopped
1.5 cups all purpose flour
1 (49 oz) can chicken broth
2.5 cups milk
about 8 cups cooked chopped chicken
1 can sliced carrots (drained)
1 can peas (drained)
1 TBSP salt
.5 tsp pepper
1 tsp poultry/chicken seasoning
can add dash of tobasco sauce if wanted

In large stock pot melt butter over med. heat. Add onions and celery and saute until onions turn transparent.
Add flour, stir until well blended, then cook and stir for 2 minutes.
Stir in broth and milk and bring to a boil, keep stirring, likes to scorch easy.
Boil and stir for 2 minutes.
Remove from heat, add chicken, carrots, peas and all the seasonings. Mix well.
Let set for 15 minutes or so – needs to cool before adding to raw pie crust (it will melt dough if too warm)

This recipe will make 3 round pies or a 9x12 cake pan

lay out the pie crust – pour in filling – put top crust on. Do not cut slits yet.
(Bake 400 degrees – 40-50 minutes total)
FIRST: bake for 15 minutes first, then brush with milk or egg for browning and cut in your slits
SECOND: then put back in for the remaining time.
Let set to thicken just a short while before you cut into it.

Hen house kitty gets a name

Well remember the little kitten that was found in the hen house? She has grown up and is sooo ornery and pretty now, and she has a name ~ BACKFIRE!

One gathering we had here to deep fry a turkey, we were sitting out around the fire waiting on the turkey to cook, miss kitty was playing around and I wasn't paying much attention, she's full size now and stays right by our side while we are outside
All the sudden I noticed a scorched or burning smell. . . what the heck?
I look down and see the cat going under the turkey fryer, back and forth and her back and tail is all in flames, geesh, I grabbed her up and rolled her around to put her fur out, the darn thing thought I was playing with her, geesh, I got her fur out, thank goodness it was long or she would have had burnt skin too, but all she did was singed off the longer portions of her fur and hadn't even a clue!
That is how this "kitten" finally got her name BACKFIRE lol
 look at her now, all growed up

 yes her, brat, she can be quite distracting at times
 she knows I will stop work to play with her
see, she knows she is spoiled terribly, oh yes she does
and she has sure turned into a beauty compared to that poor flea infested drowned rat looking baby she was when we found her about 6 months ago!

Hog butchering day!

Here at the redneck homestead, we butcher our own meat, process and pack it up for our freezer, it's so nice to know where your meat is coming from and what is going into it, we raised these ourselves in our little red barn, fed only scraps and some grain, so we know exactly what we are eating!

Better close your eyes if you don't get into butchering cuz this isn't a clean blog
 one shot, gut them, skin them
 lop the head off
 dig out the innerds you intend to use for krepple/scrapple making later
 try to keep the dog from getting into the junk pile
then start the cutting process, first we slice it in half, right down the backbone, making them manageable to get into the basement where we have the tables & saws setup to start cutting out the roasts, hams, bacon, chops, etc

Happy Birthday!

It's December yet again, we are always slammed with December birthdays around here.
I was born December 18th, a year later my sister came along on December 17th. . . 
25 years later my daughter was born on my sisters birthday, December 17th
1 year later my son was born on December 19th
so yup, we always get together to torment each other on gettin older
 Geesh, you can't take me anywhere, not even my own kitchen! Broke a nail dangit!
 whatever, moving on LOL
HAPPY BIRTHDAY TO US ALL
yeah, she knows we are just nuts!
My father in law's birthday is December 12th as well!!!
 she says "no fair, I'm older, he's taller"
 defeated HAR

game time
 ever play the board game "Would you rather. . . ?"
boy oh boy, you can learn alot about someone with this game HA HA HA
and it sure can be a ton of fun!
 what you don't want to do is fall asleep while you are here . . .
because ya know, that makes you the prime target for pranks
in this case, my son is painting my nephew's fingernails HA HA HA
fun day at school tomorrow if he isn't paying attention when he is getting ready for school!

New Curtain Toppers & wall color

OK so I decided to go outside my comfort zone and do a dark wall in my living room, I wanted a deep dark red, well see here what I got? It's like a mauve, hmmm not overly impressed and it makes the room seem sooo dark, it looks pretty where the light is on, but when light is off or not shining on the wall, it appears almost purpley mauve
 no, me not impressed, I foresee this changin in the near future, it's not "me"
 but moving over to the other walls, I made new curtain toppers, was supposed to match the one dark wall I did, I like them, just not happy with that other wall!
the big window seems like I need more swag going on or longer maybe I should say
the striped material was a tablecloth, I just cut it down to size and made enough little toppers for the 2 windows I needed them for ~ it'll make due for now - after all it IS December, about time to decorate for Christmas, so they should work ok

Party time!! Wood burner update

OH ME OH MY, sometime between the calzone & pool party, someone asked someone else to go to their Christmas party :)
 heh heh heh ok he wasn't ready for me to snap pic yet
there we go, what a cute pair they make!

How about a little update on the monster wood burner we put in the basement?
 see, I told you it was a monster, it can be used to heat with coal, oil or wood
hole in wall, ready to install the chimney pipe for it before winter!
